SAN MAI Damascus Gyuto, Stainless Steel
Stainless Damascus Gyuto Blade with 215 mm blade length, 2 mm thick and 46.5 mm high. Hand hammered top section, "tsuchime" for better food release. Total length including tang is 297 mm.
Made from Swedish 19C27 Stainless Steel in a san mai construction meaning a single cutting steel is the centre of forge-welded (damascus) stainless steels. The forge welded steels are after completion etched to reveal the unique pattern. There are 45 layers of stainless steel damascus.
This is a hard blade, heat treated to 60 HRC and needs to be treated with care, as most Japanese style blades to avoid chipping.
If wanting a metal bolster, use the R24 as this is the closest we have. As Japanese knives usually do not have metal bolsters this is not an exact fit but will work.
