Tosa Santoku 165 mm, Blue Steel #1
Tosa is within Japan considered a traditional place for forging knives and tools, these are traditional blades made with a combination of industrial machines and hand-finishing.
The carbon steel blade has satin finished bevels and polished edge and as all true Japanese kitchen blades they are thin, sharp and somewhat brittle. The high hardness gives good edge retention qualities but make these more brittle than Western chef knives. These should not be given as gifts to "non-knife people" as they will come back with chipped edges if not treated with respect. As all carbon steel blades they will patina over time in the kitchen and needs to be kept washed and dry between use.
Blade length is about 165 mm and it is 45 mm high at the heel, total length with tang is about 280 mm. As these are not production blades they will vary somewhat in dimensions and have marks showing they are partially handmade.
Blue Steel #1 is a Japanese steel often used in high-end single-bevel knives, the additionl carbon and tungsten /wolfram helps create an even better edge retention and toughness than the famous White #1 steel. The #1 means harder than the more common #2 steel for a harder, longer lasting edge. Blue Steel #1 has about 1.25-1.35% carbon so a very high carbon content.
