SAN MAI Damascus Petty Chef Blade, Stainless Steel
Stainless Damascus Santoku Blade with 150 mm blade length, 2 mm thick and about 30 mm high. Hand hammered top section, "tsuchime" for better food release. Total length including tang is 265 mm.
Made from Swedish 19C27 Stainless Steel in a "san mai" construction meaning a single cutting steel is the centre of forge-welded (damascus) stainless steels of 45 layers on each side. The forge welded steels are after completion etched to reveal the unique pattern.
This is a hard blade, heat treated to 60 HRC and needs to be treated with care, as most Japanese style blades to avoid chipping.
If wanting a metal bolster, use the R24.

This blade makes a great utility kitchen knife. The edge is sharpe and is easy to maintain. This is my second one I have made using this blade. Very pretty knife.
