Brisa Chef 185 mm Knife Blade

 Make your own full-sized chef knife with a 185 mm blade in Japanese Santoku style.

The blade is made in Europe by Finnish brand Brisa in Swedish 12c27 steel, a popular  stainless steel for chef knives.

The blade is 47 mm high, about 2.5 mm thick at the spine and has 185 mm of blade.

Total length is 305 mm including handle, and it weights in at 305 grams.

This blade really feels like a quality tool with good weight distribution and a business edge on it.

 The Santoku knife is the Japanese version of the Western general use chef's knife.

The santoku is excellent for chopping vegetables and the wide blade works well for scooping sliced food off a cutting board.

This is only the blade, sharp and ready to go. Not the full kit shown in some of the photos with scales, corby bolts and fibre spacer material.

    A really nice chefs knife comfortable in the hand the 12c27 stainless has a sharp edge with easy to clean finish. Matched with the pre milled handles is a nice easy project.
