MG Forged French Chef Blade, 200 mm
Stainless Steel blade, forged from a single piece of Molybden/Vanadium steel with integrated bolster.
Martinez & Gascon is a Spanish company, establised at the end of WWII, manufacturing chef and butchering knives.
This blade is in the French chef style, and this is the largest in the series of 3 matching blades.
The MG French Forged 200 blade is 3 mm thick with distal taper towards the tip, about 39 mm high and has about 200 mm of blade.
The blade is forged from a single Molybdenum/Vanadium Stainless Steel billet, meaning the bolster is integrated and a solid piece of the blade.
The blades are ground on German Berger grinders by hand.
Total length from tip to end of tang is 320 mm, the tang has holes for optional pins.
there are 2 x 4 mm holes, 2 x 5.8 mm holes and a rectangular 4x7 mm hole.
MG Steel has very high tensile strength:(C=0.6, Cr=14, Mo=0.5, Va=0.15).
